help with dinner plans

I am having problems with my work day/workout/dinner timing and just want some suggestions. I work from 7:00 am to 3:30 pm and that means that I eat breakfast anywhere from 6:45 to 7:30 am then lunch at 11 am, then a snack before I head to the gym. I have been doing a 4:30 spinning class, run or swim, snack in 10 min, then a 7:15 yoga class which is done at 8:15. I don’t get home until 9 and go to bed at 10 to do it all again the next day. What do you do about dinner when this happens to you? If I make dinner at 9 then I don’t eat until 9:30, plus, I don’t sleep well if I eat that close to going to bed. Any suggestions?
